ARANCINE - Risotto Balls with Meat Sauce (or substitute mushroom sauce)
We enjoyed these little jewels in Sicily and even Umbria Italy last time we were there. What we do is make risotto for one night, but make enough to have some left. Then we create golf ball size craters to hold a filling of just cheese, mushroom in red sauce or the classic, Bolognese sauce.
Simply start with the flavored risotto you have a taste for or what is in season, then make enough to have some two nights or if just serving arancini, you still need to make risotto first!
