AVOCADO LIME MOUSSE
We used this for garnish on our small plates menu with tamale and enchilada sauce with strawberry tequilla sorbet.
2 avocados, diced
- 1/4 cup heavy cream
- 1 teaspoon dried lime powder
- as needed sea salt, coriander and black pepper
Mash chopped avocado with cream. Press through seive or tammie. Place seasonings and lime into mortar pestal and ground together to make fine powder. Either add to smooth avocado mixture a little at a time to reach desired flavor, or add to top of avocato mousse when serving.
