As seen on our September 2012 Dinner Show served over individual chocolate date cakes.
4 tablespoons unsalted butter(1/2 stick)
- 1/2 cup packed dark brown sugar(3 1/2 ounces)
- 1 cinnamon stick
- 1 strip lemon zest (1 to 2 inches long by about 1 1/2 inch wide)
- 2 large, firm, ripe bananas, peeled and sliced crosswise
- 1/4 cup dark rum
- vanilla ice cream, optional
Melt butter in heavy skillet over medium heat; Add cinnamon stick and strip of lemon. Stir to dissolve the sugar. Add the bananas and coat with sauce. Off heat, add rum and light rum with light stick and then put back to heat shaking pan to disperse the flame until flame goes out. Serve immediately over individual date cakes, or sliced date cake.
