BLEU CHEESE ALFREDO
This makes a nice sauce for a steak as well as base of a grilled pizzette, as served at our MARKET DINNER SHOW 8-7, 8-8-12.
2 cup heavy cream, reduced by half
2 ounce bleu cheese, crumbled
Optional: If using as a sauce, add 1 tablespoon chopped chives and serve
Blend cream and bleu cheese over medium heat till combined. Season to taste with salt, pepper, ground coriander. Do not simmer or reduce after cheese is incorporated.
