BREAD CRUMB TOPPING
This mixture is a tasty garnish for soups, salads, fish, and traditional topping on cassoulet. Just 3 ingredients that you may embellish with herbs, fresh or dried.
- 3 cups bread crumbs, from day old crusty bread, crusts trimmed or not
- 1/2 - 3/4 cup parmesan cheese, very fine grind
- 2-3 Tablespoons soft butter
Put bread crumbs and parmesan cheese into bowl and blend with whisk. Add 2 tablespoons butter and work the butter into the cheese and bread with your fingers. Add more if you need it to evenly distribute the butter.
Spread mixture on parchment covered cookie sheet; bake in 300ºF oven for 10 minute. Check and stir if needed and continue until the mixture is a nice even brown. Cool. Crumble and store in air tight container.
