CANDIED GINGER ALMONDS

Ingredients:

  • 1 cup almonds, raw

  • ½ cup sugar
  • 2 TBS candied ginger, minced

Method:

Combine nuts, sugar and ginger into a large sauté pan; cook over high heat stirring constantly to coat/avoid burning; cook until sugar dissolves and becomes amber in color; remove to a Silpat or other silicone lined sheet pan; sprinkle with salt; allow to cool completely before breaking into small bite portions.
