CANDIED NUTS

Ingredients:

  • 1 cup nuts, raw (we like walnuts and hazelnuts, and sometimes peanuts)

  • ½ cup sugar
  • 1 tablespoon salt, vanilla salt*, or other designer flake salt

Method:

Combine nuts and sugar into a large saute pan; cook over high heat stirring constantly to coat/avoid burning; cook until sugar starts to dissolve and becomes amber in color; remove to a Silpat or other silicone lined sheet pan; spread out. Some sugar will remain undissolved. While still hot, sprinkle with a little salt. Cool completely before breaking into small bite portions.
*To make Vanilla sea salt:  ½ cup coarse sea salt, 1 vanilla bean,  scraped into salt;  stir to combine; cover to reserve.
