CARROTS, NEW ROASTED GLAZED
As we do for our FRESH MARKET dinner show, these must be out of the garden fresh! That way the simple glaze is merely to dress them up for company and make a nice shiny looking carrot dish.
- 1 pound carrots, split lengthwise down the center
- 3 tablespoons mustard (dijon style)
- 2-3 teaspoons honey
- 3 tablespoons EVOO
- pinch salt
- few grinds pepper and coriander
Blend mustard and honey and salt and seasonings. Whisk in EVOO. When fully added set aside until carrots are mostly roasted.
Place carrots on lightly oiled cooking sheet, cut side down. Roast in 350°F oven until almost tender about 15 minutes. Remove from oven and using pastry brush, brush with glaze. Return to oven for 5-8 minutes. Serve immediately.
