CHERRIES IN MINTED SYRUP
- 1 cup each Bing and Rainier cherries, pitted, chopped
- 1 pint fresh raspberries, or other fresh berry (to balance the sweetness of the cherries)
- Mint simple syrup: 1 cup natural sugar
- 1 cup water
- 6 fresh mint leaves
For fruit: Combine cherries and other fruit(s). Blend with 1/2 cup of the mint simple syrup.
To make simple syrup with mint: Combine sugar and water in small sauce pan. Bring to boil and dissolve the sugar. Add the mint while hot, but off heat, steeping it 8-10 minutes. Remove mint leaves and chill before using on the fruit.
