CROTIN (fried cheese)
2 ounce goat cheese (chevre)
- 2 ounce cream cheese
- ½ cup all-purpose flour
- 1 egg
- ½ cup toasted pecans (may use almond or macadamia, or even bread crumbs)
- 2 cups vegetable oil to deep fry (high smoke point; neutral flavor such as grapeseed oil)
Cream cheeses together and form into desired size balls or disks. Dredging in flour, then coating in whisked egg with a little water and drop each disk of cheese to coat; then roll in desired nut or other coating. Lay on a parchment line sheet pan; refrigerate for 30 minutes. Fry in heated oil (350º) until golden brown; remove to paper towel and blot dry. Serve immediately, or refrigerate until needed for service. At service, reheat in 400ºF oven for approximately 4 – 5 minutes.
