COUSCOUS with DILLY ONION & CUCUMBER
1 cup dilly onions (see recipe)
1 cup cucumbers, peeled, seeded, halved, sliced into half moons
1 cup Israeli (pearl) Couscous (precooked)
1-2 tablespoons EVOO
few grinds coriander and fresh pepper
1/2 - 1 tablespoon sweet aged balsamic to drizzle on top
Garnish with farmer's cheese, if desired.
Make recipe for dilly onions; drain. Prepare cucumber and couscous; combine with onions. Season with sea salt. Add EVOO as needed, coriander and pepper. Taste. Plate up and drizzle with aged balsamic; if using, crumble farmer’s cheese on top.
