SAUSAGE, FRESH BEEF (with Flavors of the Middle East spice blend)
2 ½ pounds ground beef (chuck)
- 1 Tablespoons Flavors of the Middle East
- 3-5 teaspoons salt
- 2 ounces EVOO
Gently distribute spice mix throughout the ground beef. Add EVOO and salt in small increments. Check flavor after each addition by pinching off a piece of meat and cooking it. Taste for enough spice and salt. Continue until you reach enough of each. Record that amount for the next time you make it.
