FRIED GARBANZO BEANS
- 1/2 cup cooked garbanzo beans, cooled and dry
- 4 cups vegetable oil
- Sea salt and fennel pollen, as needed for flavor
Place beans on paper towels to dry completely before adding to oil. Meantime, heat oil in heavy pot, large enough for oil to fill no higher than half way. Place on medium heat, and bring up to 350°F. Gently place half of the beans into the hot oil and cook for approximately 3-5 minutes or until beans are crispy, crunchy and slightly withered. Remove to paper towels and roll around to drain well. Season with salt and fennel pollen.
