BRUSCHETTA, GARLIC RUBBED
12 slices artisan bread
- As needed EVOO to brush bread
- As needed sea salt and coriander to season bread
- 2 cloves garlic, split
Place bread on sheet pan and brush with EVOO; season with salt and ground coriander; place on a preheated grill; brush lightly with EVOO; grill on each side for approximately 20 seconds or until the bread is lightly marked – remove and rub garlic over each slice.
In Italy we see topped bruschetta for pre dinner or antipasto with chopped tomatoes, capers, artichoke hearts, ricotta cheese, prosciutto, and more. Make up the bruschetta and rub with fresh garlic, then top with your own choices.
