BLINTZ, WITH GOAT CHEESE FILLING
4 ounce goat cheese
- 1 ounce ricotta cheese
- 1 Tablespoons salted butter
- 2-3 teaspoon dill
- ¼ to ½ teaspoon lemon zest
- As needed sea salt and coriander
Cream goat cheese, ricotta and butter in a mixer with a paddle; add dill, zest, and seasonings.
Place approximately 2 ½ ounces filling in the center of each crepe; fold over and under each side to form blintz, square pillow shapes. Reserve on buttered pan or parchment lined pan for service.
