2 ripe avocados, split in half and flesh removed
- 1-3 tablespoons cream
- 1 cup cucumbers, seeded and finely chopped
- EVOO as needed
- Salt, Pepper, Coriander
Mash the ripe avocados, leaving slightly chunky. Add cream to coat–don’t use all of it if not needed. You still want to taste the avocado. Add cucumber and toss. Serve immediately or keep refrigerated until needed. Bring out 30 minutes ahead of service to bring to better serving temperature.
