LEEKS, OVEN BRAISED IN BUTTER AND WINE
- 1 pound leeks, split in half lengthwise and thoroughly cleaned
- 4 ounces butter
- 1 cup white wine
- 1 cup water
- Salt, pepper, coriander, to taste
Carefully clean the leeks without loosing their shape. In sauce pan melt butter with wine and water and lay leeks on top in in a single layer. Salt pepper coriander to taste. Cover with parchment, loosely with steam vent slit in middle. Place in 325°F oven for 45 minutes. Serve immediately. Leeks should be creamy and melted but still hold their shape.
