At EVOO our favorite method for writing menus is to use local Pacific NW ingredients prepared in the style of the Mediterranean cuisines. For some people the phrase “Mediterranean cuisine” translates to Greek cuisines. For use it simply means that in most of our menus olive oil is dominant to butter and vegetables, legumes, fruits, and grains are given status on the plate. While in the Mediterranean countries, the animal proteins that take starring roles on the plate depend on the agricultural commerce of the country. At EVOO, seafood and poultry make frequent appearances while red meats like beef and lamb are reserved for more special times. The regular use of herbs and spices is essential, and some favorite flavors of ours include coriander, fennel, mushrooms, garlic, lentils, nuts, tomato, basil, peppers, cilantro, cumin, and saffron.

With our menus we strive to inspire our guests to enjoy cooking in the flavorful, healthy style of the Mediterranean, which for us, also includes gathering around the table for meals with family and friends.
