“Primavera” means spring style. So spring vegetables work well and may be used to top the spaghetti or toss with the pasta.
As needed EVOO
- 3 cloves garlic, sliced
- 1 head shallot, minced
- 1 cup asparagus, blanched, bias cut
- 1 zucchini, diced or julienne
- 1 yellow squash, diced or julienne
- 1 red and yellow bell pepper, diced or julienne
1 lb. tomato pasta (see recipe)
½- 1 cup grated parmesan cheese
Heat oil in large sauté pan; add garlic and shallots; cook until aromatic; add vegetables and pasta cook to heat through. Add Parmesan cheese & toss. Serve immediately.
