POTATOES, SMASHED NEW RED BLISS
SMASHED RED BLISS NEW POTATOES as seen in our MAY 2017 DINNER SHOW.
1 pound potatoes (new red bliss “C” or yellow Yukon gold, same size)
1 Tablespoon sea salt
1 head garlic, cleaned
As needed water to cover potatoes plus 1″
1 cup oven braised leeks, heated
3 Tablespoons Italian parsley, chopped
1/4 cup EVOO
Wash the potatoes using a soft abrasive cloth; carefully remove any sand or dirt spots from the skin. Combine potatoes, salt, garlic and enough water to cover potatoes, plus one inch, in a medium pot with a lid. Bring to a simmer with the lid on and cook for approximately 12-20 minutes or until potatoes are tender; remove and drain leaving a small amount of water. While hot, add the oven braised leeks in butter and smash to incorporate, using potato masher. Toss in parsley and EVOO. Adjust salt. As needed.
