ROAST TENDERLOIN OF BEEF
1 five-seven pound tenderloin, trimmed (save trim for another purpose)
- 1 teaspoon sea salt
- 1/4 cup EVOO
- 1/4 cup parsley, finely minced
- Bob's Flavors of the Middle East seasoning blend
Place tenderloin on roasting pan with rack. Make the salt, oil and parsley into a paste; add seasoning blend to taste and rub onto tenderloin. Place into prehated oven at 425ºF oven for approximately 20-25 minutes or until internal temperature reaches 125ºF.
Rest out of the oven covered for 10-20 minutes before slicing. Slice and serve with pinch pot of finishing salt.
