SAGE LEMON OIL FOR FRESH PASTA
This simple preparation is oftenour sauce of choice for fresh pasta sauces since it is simple and never over powers the fresh pasta. We also like Brown butter sage cream sauce on pasta.
1/2 cup EVOO
- 2 tablespoons butter
- 2-4 whole large leaves fresh sage
- juice of 1/2 lemon
- 1 teaspoon zest of lemon
- parmesan cheese, to taste, optional
Place EVOO and butter in sauce pan over low; add sage. When warm after about 12-15 minutes, remove sage; add lemon juice and zest. Taste. Adjust with a little salt. Toss with tortillini or other pasta. Serve with parmesan cheese.
