SMOKED FILET OF BEEF
4 each 3 oz fillets, tenderloin of beef
- 1 cup wood chips
- 1 egg white frothed with 1 TBS water
- ¼ cup chives, minced
- As needed sea salt, pepper and coriander
- 3 TBS grape seed oil
Place fillets over wood chips on stove top smoker and smoke to desired flavor; remove and chill. Coat chilled filets with egg white mixture; coat with chives and season. Heat oil in a large saute pan; add fillets an cook to crisp approximately 2 minutes on first side and 3 minutes on remaining side; remove and serve.
