The depth of flavor unique to soy sauce is why Chef Bob uses it even outside of the confines of Asian cuisine. The flavor known as “umami” is what some say soy sauce is about. When it is used however it must not over power the rest of the ingredients. Chef Bob has never really appreciated soy sauce used as a salt at the table.

Soy is a fermented food, made with soy beans, wheat, water and salt. While fermented foods are excellent to add to the diet, use soy with restraint because of its high sodium content.
