Use by itself with a little basil olive oil or add to strawberry shortcake for a boost of strawberry flavor and contrast in temp and texture. Whipped creme fraiche is especially good with sweet strawberry shortcake with fresh berries & the strawberry sorbet.
2# strawberries, diced
- ¼ cup honey,
- 1 cup superfine sugar, pinch of sea salt
Cook fruit and cool. Puree all fruit and strain; add honey, sugar and salt; freeze in ice cream maker according to manufacturer’s directions. Remove to freezer, well sealed.
