SORBET, STRAWBERRY TEQUILA
this one came about because we were updating a favorite salad, Watermelon feta with Watercress, and decided to marinate a wedge of watermelon and top it off with cumin cream and this strawberry tequila sorbet.
2 pounds strawberries, diced
- 1 cup natural sugar, superfine
- 2 tablespoons honey
- 1/2 cup julienne of basil, optional
- 1/4 cup tequila
- 1/8 teaspoon sea salt
Cook fruit, sugar, honey, tequila and basil. Press through a strainer. Add salt. Cool before freezing according to ice cream maker instructions. Scoop and serve as condiment to watermelon wedge salad and beef tenderloin.
