SWEET FRESH PICKLES
4 quarts cucumbers, pickling, washed & sliced
- ½ cup salt
- 2 quarts ice cubes
- 4-6 cup sugar
- 5-6 cup white vinegar
- 1 each Tablespoon of turmeric, whole clove, light & dark mustard seed, red pepper flakes
Soak cut in non corrosive container with salt and ice at room temperature three hours. Meantime, in large pot, bring to boil sugar, vinegar, turmeric, cloves, mustard seeds, red pepper. Add drained cucumbers and leave on heat 3-5 minutes more until pickles are about 145 deg F but mixture should not boil again. Remove pickles (lift out and drain) and chill pickles uncovered in refrigerator. Store in refrigerator.
