TO CLARIFIED BUTTER
1 pound butter, cut into 1 inch pieces
Melt butter in medium sauce pot over medium heat until it is melted, but never boils. Pull from heat and refrigerate in pot until turns liquid is solid again. There will be a small amount of milk solids and water in the bottom.
Two ways to access just the clarified butter in pot:
1. Make tiny hole in solid fat and pour off liquid, or 2. Carefully pull solid layer off and blot with paper towel.
Freeze clarified butter for longer keeping. It actually has greater shelf life than whole butter. It is also lactose free and good for those with lactose intolerance.
