That’s TOMATO sorbet under the basil, with Fried Green Tomato, fresh tomato slice and mozzarella cheese!
1/2 cup tomatoes, chopped
- 1/4 cup rose wine
- 3 tablespoons sugar
- 2 tablespoons onion
- 3 tablespoons red wine vinegar
- 1/2 teaspoon salt
- pinch cayenne
- 1 tablespoon basil olive oil, optional
Bring tomatoes, wine, sugar, and onion to boil and simmer about 8-10 minutes. Puree in food processor and strain through fine mesh sieve. Place liquid into bowl and add vinegar, cayenne and salt. Add oil, if using. Blend. Put into ice cream machine and churn according to manufacturer’s directions.
Serving suggestion: Scoop onto basil infused whipped cream and serve with fried green tomatoes as we did in our August 2012 Dinner Show.
