VODKA CAVIAR CHIVE CREAM
2 cups fresh heavy cream
- 1/2 cup vodka
- salt and pepper and coriander, as needed
- 2 tablespoons fresh chives, minced
- American caviar to garnish, rather than mix into cream
In separate pans, reduce cream and vodka by half and combine, adding vodka to the cream to prevent curdling. Season to taste with salt pepper coriander and finally add chives and serve.
Chef’s note: Season carefully. Think of final application. If serving with something that is already fully seasoned, you may under season the sauce so it balances with the product paired with it such as caviar.
